Healthy Nachos

This is a favorite during football season! Bring this delicious treat to a tailgate party and share with friends!

Ingredients: 

  • 1.5 pounds of Ground Turkey
  • 2 cans of petite diced tomatoes (low sodium and organic optional) 
  • 1 can of cream corn (organic optional) 
  • 1 can of black beans ( rinsed and organic) 
  • optional 1 jar of salsa (medium) 
  • 2 cups of mozzarella cheese 
  • 1 tbsp of sea salt 
  • 1 tbsp of black ground pepper 
  • 1 bag of blue corn gluten free chips- divided 

 Directions: 

  • Preheat oven 350 degrees 
  • Cook turkey until brown adding in your salt and pepper 
  • Spray a large backing dish 11x13 with cooking spray 
  • Using half the bag of chips spread on the bottom
  • Spread out the cooked brown turkey 
  • Layer the cream corn, tomatoes, and black beans on top 
  • Top with Salsa and then add your cheese 
  • Bake in oven for 20 min 
  • Serve with remaining chips
